Erythritol, on the other hand, has a much lower sweetness - by around 30-40% compared to sucrose.

For many people, working with chocolate without added sugar is also an important aspect, especially for confectioners and baking enthusiasts. Maltitol, xylitol and stevia also top the list in this category. They do not adversely affect, for example, the stability of creams or their consistency. Erythritol, on the other hand, crystallises when dissolved and cooled, so this is worth taking into account when preparing desserts.

Same sweetness, lower calories

All the sucrose substitutes we have mentioned have a very big advantage - their energy value is much lower. Here the winners are erythritol and stevia, whose glycaemic index and calorific value are almost zero. The values of xylitol and maltitol, on the other hand, are half that. This is therefore a great option for people who are wary of products containing sucrose.
